Behind The Nai Harn’s cocktail programme is the enduring influence of Salim Khoury, former Head Barman of the legendary American Bar at The Savoy, London. Salim joined The Savoy in 1969 and spent more than forty years refining his craft, becoming only the tenth Head Barman in the American Bar’s history since its opening in 1893.

In 1992, he was named UK Bartender of the Year for his cocktail tribute to Princess Diana, the now-iconic Blushing Monarch.

As The Nai Harn prepared to reopen in 2015, Salim Khoury was invited to collaborate on a beverage programme that reflected the resort’s philosophy of relaxed luxury. From 2015 onwards, he returned annually to train the bar team and develop a collection of signature cocktails exclusively for the resort.

Although Salim Khoury passed away in June 2021, his approach to mixology, focused on balance, restraint, and respect for ingredients, continues to shape the cocktail culture at The Nai Harn.
